Soft paneer and sweet green peas in a quick, spiced tomato-ginger gravy — a weeknight staple that tastes like it took much longer.

Ingredients

  • 200 g paneer, cubed
  • 1 cup matar (green peas)
  • 2 medium tomatoes, pureed
  • 1 tsp adrak (ginger) paste
  • 3 tsp coriander powder
  • 1 tsp red chilli powder
  • ½ tsp garam masala powder
  • ½ tsp zeera (cumin seeds)
  • 1 pinch sugar · Salt to taste
  • 4 tbsp oil

Method

  1. Heat oil. Add zeera and let it splutter.

  2. Add coriander powder, red chilli, and garam masala. Add tomatoes, ginger paste, a pinch of sugar, and salt. Fry until oil separates.

  3. Add peas with a splash of water. Cover and cook for 2 minutes or until peas soften.

  4. Add paneer cubes and cook for 1 minute. Serve with roti or rice.
