Ingredients

  • ½ kg basmati rice
  • ½ tsp zeera (cumin seeds)
  • 1 medium onion, chopped
  • ½ tsp turmeric powder
  • ½ tsp red chilli powder
  • ¼ tsp garam masala powder
  • 4 tbsp oil
  • ½ tsp salt
  • 3 potatoes, cut into 1-inch pieces
  • Water as needed

Method

  1. Soak rice for at least 30 minutes, then wash and drain.

  2. Heat oil in a pressure cooker. Add zeera, let it sizzle, then add onions and fry until light brown.

  3. Add turmeric, red chilli, and garam masala powder. Stir briefly.

  4. Add potatoes and enough water to just submerge them. Add salt and let it boil for 2 minutes.

  5. Add the washed rice. Water should be 1.5 inches above the rice. The salt should taste slightly high at this point.

  6. Stir occasionally until water drops to ¼ inch above rice. Close the lid and cook with 1 whistle. Let pressure release on its own.

Serving suggestion: Best with raita, pickle, and a spoonful of ghee stirred through at the end.
